The spicy spices, vanilla, and orange in this apple compote make it delicious on pancakes, french toast, and ice cream.
Ingredient
2 pounds tart apples peeled, cored, and cut into ½-inch chunks
½ cup lightly packed light brown sugar
1 teaspoon apple pie spice
2 tablespoons orange juice
1 teaspoon orange zest optional
1 tablespoon lemon juice
1 teaspoon pure vanilla extract
Instruction
Mix chopped apples, brown sugar, apple pie spice, orange juice, zest, and lemon juice in a medium heavy-bottomed pot. Medium-low heat. For 30–40 minutes, stir often until apples are cooked but still retain shape and juices are syrupy.

Stir in vanilla after removing from heat. Serve warm or cold on pancakes, waffles, french toast, yogurt, ice cream, etc.
