Get the ice water bath ready.
Put ice cubes and 8 to 10 cups of water in a big bowl.

Beans should be washed in cold water, and the ends of green beans should be cut off. Beans can then be shopped or left whole.

Green beans should be boiled.
Put 1 quart (4 liters/16 cups) of water in a big saucepan.

Bring to a boil with 1 tablespoon of salt added.
Bring the green beans to a boil. Start a three-minute timer.

After three minutes of boiling, use a sieve to drain the hot water right away. Put the hot green beans into the ice water that is very cold.
