Vegan Berry Crumble Bars Recipe

The gluten-free Vegan Berry Crumble Bars have juicy berries. Oats form the base and crumble of these simple bars. Healthy, tasty breakfast, snack, or dessert.I dream of new baking recipes when the markets have the prettiest berries. After my strawberry crumble bars were popular, I made vegan mixed-berry bars.

Ingredient

For the crust and crumble: – 1 cup old-fashioned rolled oat – ¾ cup Bob's Red Mill 1-to-1 Gluten-free Baking Flour – ½ cup brown sugar packed – ½ teaspoon salt – 8 Tablespoons margarine melted – ½ teaspoon vanilla extract For the filling: – 2 cups finely mixed berrie – 2 tablespoons maple syrup – Zest of one lemon – 2 teaspoons cornstarch

Pre-heat the oven to 375°F and line an 8"x8" baking pan with parchment.

Mix oats, flour, brown sugar, and salt in a medium bowl. Stir in vanilla and melted butter (I used Earth Balance Vegan sticks).

Set aside 1/3 of the oat mixture for topping. Press the remaining 2/3 of crumble mix into your baking pan to form a crust.

Prepare the filling by mixing blueberries, raspberries, and strawberries (hulled and cut into small pieces) with sugar, lemon zest, and cornstarch in a small bowl. Spread berry filling evenly over warm crust with a spatula.

To prepare the crumble, sprinkle the remaining mixture over the berry filling, covering as much as possible. Uncovered areas will remain.

Bake until crust and crumble are golden and strawberries bubble slightly, 30–35 minutes (mine was done at 32 minutes). All ovens are different).

Cool completely before removing from pan. Wait a few hours in the fridge before slicing, or do it right away like we did. It will be difficult to slice and they will break if you don't wait.
