These Lemon Cookies are very soft and taste great with lemon. It's really simple to make these cookies, and they're great for people who love lemon desserts.
INGREDIENTS
SERVINGS: 18 COOKIES– 1 and 3/4 cup (220 grams) all-purpose flour (spooned & leveled)– 1/2 teaspoon baking soda– 1/4 teaspoon salt– 1/2 cup (115 grams) unsalted butter softened– 3/4 cup (150 grams) granulated sugar– 1 large egg at room temperature– Zest of one medium lemon– 1 tablespoon (15 ml) fresh lemon juice– 1 and 1/2 teaspoons lemon extract– Optional: 2-3 drops of yellow food coloring
INSTRUCTIONS
Mix flour, baking soda, and salt in a large bowl. Set aside. Beat the butter and granulated sugar for 1–2 minutes in a stand mixer with the paddle attachment or a large bowl with a handheld mixer. Fully mix in the egg.

Add the lemon zest, juice, extract, and yellow food coloring and mix until combined, stopping to scrape the bowl. Mix the dry ingredients just until combined.

Refrigerate for at least 30 minutes with a tight lid. Heat the oven to 350°F (177°C). Prepare two large baking sheets with parchment or silicone mats.

Take cookie dough from the fridge. Leave space between cookie dough balls on prepared baking sheets when using a 1.5 tablespoon cookie scoop.

Bake cookies until the tops are set, 10–12 minutes. Cool the cookies on the baking sheets for 5–10 minutes before transferring them to a wire rack to finish cooling.
