Easy Italian Garlic Rosemary Steak-Tagliato di Manzo Recipe

Ingredient
For the steak:
3 sirloin or rib-eye steaks
3 teaspoons sea salt
freshly ground pepper
4 Tablespoon extra-virgin olive oil
2 cloves garlic
2 sprigs fresh rosemary
For the ammoglio sauce:
½ cup extra-virgin olive oil
juice of one lemon
2 large tomatoes
1 clove garlic minced
1 Tablespoon chopped fresh rosemary
½-1 teaspoon sea salt

This simple fresh tomato sauce is optional for ammoglio. Mix the ammoglio ingredients in a medium bowl. Let sit at room temperature for 45 minutes before preparing the steak.

Heat a grill pan or cast-iron pan over medium-high heat. Apply an even layer of extra-virgin olive oil (2 tablespoons). Heat oil until shimmering.

Cook the steaks: Sear both sides depending on thickness and desired cooking. I cooked the steak for 3-4 minutes per side, flipping it every minute, for medium-rare.

Cook the garlic with rosemary: While the steaks are finishing cooking, remove them to a dish and add 1-2 tablespoons of olive oil to the pan. Mix in garlic and rosemary. Move the garlic to color it without burning.

To finish the steak, add it to the pan with garlic, rosemary, and oil. Cook for about 1 minute per side, turning once, to infuse the flavors.

Carefully place the steaks on a large cutting board to rest. You can drizzle garlic-rosemary oil from the pan on the steak or toss it. Rest the steak for 10 minutes.

After resting, slice the steak into ¼ to ½ inch thick slices and serve. If desired, add salt and freshly ground pepper. If using, serve with ammoglio sauce or your preferred sauce and sides. Enjoy!
