This classic almond biscotti recipe is just slightly sweet and full of almond flavour. It's great for dipping in your morning coffee or tea.
INGREDIENTS
– 3 cups all-purpose flour spooned and leveled (375 grams)– 1 cup granulated sugar (200 grams)– 1 tablespoon baking powder– ½ teaspoon sea salt or table salt– ½ cup vegetable oil or other neutral oil (120 ml)– 3 large eggs at room temperature– 1 ½ teaspoons pure vanilla extract– 1 tablespoon almond extract– 1 cup slivered almonds (120 grams)
INSTRUCTIONS
Preheat the oven to 350°F (180°C) and line two large cookie sheets with parchment. Set aside. Mix flour, sugar, baking powder, and salt in a large bowl. Set aside.
1
In a separate bowl, mix oil, eggs, vanilla, and almond extract. Add wet ingredients to dry and mix just until combined. If easier, make dough with your hands.
2
Stir in slivered almonds. Form three 3- or 4-inch-wide, 8-inch-long dough logs; place two on one cookie sheet and one on the other.
3
Bake until tops are set and edges are lightly browned, 23–26 minutes. After baking, carefully slice each log into 1-inch diagonal slices.
4
Slices should be cut side up and 1 inch apart on baking sheets. Bake another 10 minutes. Flip biscotti slices and bake for 8–10 minutes until golden brown. Cool completely before serving.
