Chocolate should be available to all, regardless of diet. Mousse is a decadent chocolate dessert that can be veganized with super-soft tofu. Desserts and smoothies use silken tofu because its creamy texture blends well.
1 (10-ounce) block silken tofu, drained
2 teaspoons Dutch-process cocoa powder
1 tablespoon granulated sugar
1 teaspoon vanilla extract
3 ounces 70% dark chocolate, melted
½ cup coconut cream
3 tablespoons brown sugar
½ teaspoon cornstarch

Blend tofu, cocoa powder, sugar, vanilla, and melted chocolate. Smoothly blend and set aside.
Mix coconut cream, brown sugar, and cornstarch in a small saucepan. Stir constantly over medium heat until foamy.

Cook, stirring, until thick and smooth, 5 minutes on medium-low heat. Reserving 1 tablespoon coconut caramel for topping, swirl the rest into the tofu.

Refrigerate mousse in ramekins or jars for at least an hour to set.Add Maldon salt and reserved caramel to serve.
