In about 30 minutes, you can have these tasty Banana Muffins ready. They are easy to make and full of flavor. The best way to get rid of bananas that are too ripe!
INGREDIENTS
– 1 and ½ cups (190 grams) all-purpose flour spooned & leveled– 1 teaspoon baking soda– ½ teaspoon ground cinnamon– ¼ teaspoon salt– 6 tablespoons (85 grams) unsalted butter, melted and slightly cooled– ⅔ cup (135 grams) light brown sugar, packed– 1 large egg room temperature– 1 and ½ teaspoons pure vanilla extract– 1 and ½ cups (375 grams) mashed ripe banana
INSTRUCTIONS
Warm the oven up to 190°C (375°F). Put muffin liners in a 12-count muffin pan and set it aside. Mix all-purpose flour, baking soda, ground cinnamon, and salt in a large bowl. Set aside.

Whisk melted butter, brown sugar, egg, vanilla extract, and mashed banana in a separate bowl until combined. Mix the dry and wet ingredients until just combined, being careful not to overmix the batter.

Split the batter among 12 muffin cups. Bake muffins for 16–20 minutes at 375°F (190°C) until a toothpick inserted into the center comes out clean. After 5 minutes in the pan, carefully remove the muffins and cool them on a wire rack.
