– 3 to 4 cups canola oil – 3 cups diced Fuji apples peeled, cored, and diced - approx 3 large apples or 4 medium apples (375 grams) – 2 teaspoons fresh lemon juice – 1 ½ cups all-purpose flour spooned & leveled (190 grams) – ⅓ cup granulated sugar (65 grams) – 1 ½ teaspoons baking powder – ½ teaspoon salt – ¾ teaspoon ground cinnamon – ½ teaspoon ground nutmeg

Ingredient

– ½ cup whole milk (120 ml) – 1 large egg lightly beaten – 3 tablespoons unsalted butter melted and slightly cooled (45 grams) – 1 teaspoon pure vanilla extract

Direction

HEAT oven to 350°F (180°C). An 8-inch circular cake pan needs nonstick spray and parchment paper. Butter and chocolate are diced in a large microwave-safe bowl.

1

Blend chocolate every 20–30 seconds in the microwave. Cool for 5 minutes. Add vanilla, sugar, and cooled chocolate before adding eggs.

2

Whisk cocoa, espresso, baking, and salt in the bowl. Avoid overmixing batter. Smooth cake batter in buttered pan using knife or spoon.

3

Bake on the center rack for 28–33 minutes until a toothpick inserted into the center comes out largely clean with moist crumbs. After baking, pan-cool 5–10 minutes.

4

After carefully inverting the cake, let it cool on another cooling rack. Top cake with whipped cream, chocolate ganache, or confectioners' sugar! Vanilla ice cream instead.
