Buttermilk Pancakes Recipe

It's really simple to make these buttermilk pancakes, and they always turn out great. This is great for breakfast, brunch, or even dinner!

INGREDIENTS 

SERVINGS: 14 PANCAKES – 2 cups (250 grams) all-purpose flour, spooned & leveled – 2 teaspoons baking powder – 1 teaspoon baking soda – 1/2 teaspoon salt – 1 and 3/4 cup (420 ml) buttermilk – 3 tablespoons (40 grams) granulated sugar – 3 tablespoons (45 ml) oil – 2 teaspoons pure vanilla extract – 2 large egg

INSTRUCTIONS

Place a large skillet or griddle on medium heat and spray with nonstick cooking spray. Mix flour, baking powder, baking soda, and salt in a large bowl. Set aside.

Whisk buttermilk, granulated sugar, oil (or melted butter), vanilla extract, and eggs in a separate bowl until combined. Be careful not to overmix the batter as you add the dry ingredients to the wet.

Scoop batter from bowl and place on heated skillet or griddle using ¼ cup measuring cup. After the top bubbles and the edges set, carefully flip the pancakes and cook for another 1-2 minutes.

Warm the toppings and serve them with maple syrup, strawberry sauce, or any other toppings you prefer!
