Cauliflower Rice Burrito Bowl Recipe

Whether you're on a low-carb diet or just want more veggies, cauliflower rice is popping up in all kinds of dishes. It's easy to make, rich in nutrients and fiber, and delicious raw or cooked. 

½ head cauliflower, cut into small florets 2 tablespoon oil, divided ¼ cup diced yellow onion 2 diced garlic cloves 1 teaspoon cumin 1 teaspoon salt, divided ¼ teaspoon chili powder 3 tablespoons lime juice, divided ¼ cup red salsa ½ red onion, sliced 1 sliced red pepper 1 sliced green pepper 1 sliced yellow pepper ¼ cup tahini 2 tablespoons Sriracha

Process cauliflower into rice with a food processor's grating blade. Use 1 tablespoon of oil in a large frying pan on medium heat.

Sauté onion and garlic for 2 minutes. Steam cauliflower rice for 5 minutes in a covered pan on medium-low heat.

Mix cooked cauliflower rice with cumin, ½ teaspoon salt, chili powder, 2 tablespoons lime juice, and salsa in a bowl.

As soon as the remaining oil is added to a frying pan, the temperature should be raised to medium-high.

Add sliced red onion, green, and yellow peppers. Stir frequently for 10-15 minutes until soft.

Mix tahini, 4 tablespoons water, Sriracha, garlic powder, lime juice, and salt in a small bowl. Cut the avocado.

Add cauliflower rice, black beans, peppers, corn, tomatoes, and avocado to bowls. Pour sauce over or serve separately.

Serve cauliflower rice burrito bowls. If desired, garnish with cilantro, jalapeño, and lime wedges.
