– 1 ¾ cups all-purpose flour– ¼ teaspoon baking soda– ¼ teaspoon coarse salt– ⅓ cup unsalted butter – ¾ cup granulated sugar– 1 cup unsulfured molasse– 4 large egg white– ½ cup semi-sweet chocolate chip– ½ cup confectioner’s sugar

Heat oven to 350 F. Parchment an 8-inch square baking dish. Spray paper with baking spray. Mix flour, baking soda, and salt in a medium bowl.

Beat butter and granulated sugar on medium speed until pale and fluffy. Beat egg whites and molasses until combined.

Slow down the mixer and add the flour mixture in small amounts until it is all mixed in.

Use a spatula to scrape down the sides, and make sure to mix all the flour bits into the batter. The chocolate chips should be carefully mixed in.

Place batter on parchment-lined baking pan.
Bake for 40–45 minutes or until a toothpick inserted in the middle comes out clean.

After cooling, remove the parchment paper and cut the cake into 1 1/2-inch squares.

Put 1/2 cup powdered sugar in a ziplock bag. Shake the baggie as you add squares to coat them.
