Chewy Peanut Butter Cookies Recipe

Chewy peanut butter cookies are soft, chewy, richly buttery cookies made with peanut butter. The homemade peanut butter cookies have a dusting of sugar on top. 

– 1¼ cups (150 g) all purpose flour – ½ teaspoon salt – ½ teaspoon baking soda – ¼ teaspoon baking powder – ½ cup (113 g) unsalted butter, softened but still cool to the touch – ¾ cup (150 g) light brown sugar – ¼ cup (50 g) granulated sugar – 1 large egg, room temperature – 1 large egg yolk, room temperature – 2 teaspoons (10 ml) vanilla extract – ½ cup (128 g) creamy peanut butter

Set the oven temperature to 350 degrees Fahrenheit (177 degrees Celsius). Using parchment paper, line two baking pans.

Mix together the flour, baking powder, baking soda, and salt thoroughly in a big bowl.

In another large bowl, mix butter, light brown sugar, and granulated sugar for 1–2 minutes on medium speed. Mix egg, yolk, vanilla, and smooth peanut butter on low.

Mix dry ingredients into wet barely mixed. Very soft dough. The peanut butter cookie dough ball is ready to bake if it is scooped. If not, refrigerate the dough for 20–30 minutes.

Add 2 tablespoons (30 ml) soft peanut butter cookie dough to a baking sheet. Place eight pb cookie dough balls 2–3 inches apart on the baking sheet. Season with sugar.

Bake chewy old-fashioned peanut butter cookies for 10–12 minutes. Set, light-golden brown edges.

Remove cookies from oven to cooling rack or stovetop. After 3–5 minutes, remove the cookies from the hot baking sheet and cool on the rack. Enjoy!
