Chicken Mole-Ish Chili Recipe

Chocolate is usually reserved for baked goods, but mole sauce lets us use it in savory dishes. Chocolate in savory dishes is delicious, as shown in this chicken mole-ish chili recipe.

– 2 + 1 tablespoons olive oil, divided – 4 boneless, skinless chicken breasts, diced into bite-size piece – 1 onion, diced – 1 large red pepper, diced – 4 cloves garlic, minced – 1 (28-ounce) can crushed tomatoe – 1 (16-ounce) can of beer – 2 chipotle peppers in adobo (from can), minced – 2 ½ teaspoons sea salt – ½ teaspoon pepper – ½ tablespoon Mexican oregano – 2 teaspoons chili powder – 2 teaspoons cumin – 2 cinnamon stick – 4 ounces dark chocolate

Over high heat, add 2 tablespoons oil to a large pot. Sear chicken for 2 minutes to lightly brown all sides.

 Reduce heat to medium-high. Sauté onion, peppers, and garlic for 2 minutes in the pot. Stir in tomatoes and beer.

Chipotles, salt, pepper, oregano, chili powder, cumin, and cinnamon sticks. Mix well. Stir in chocolate to melt.

After boiling, reduce heat and simmer for 30 minutes. Put chili in bowls and top with lime, sour cream, avocado, radishes, and cilantro.
