This banana bread uses cinnamon twice! Cinnamon flavours the batter and the loaf's cinnamon-sugar swirl. This is a simple “anytime” dessert recipe!
– ½ cup unsalted butter softened (115 grams)– ½ cup granulated sugar (100 grams)– ¼ cup light brown sugar (50 grams)– 2 large eggs at room temperature– 1 teaspoon pure vanilla extract

– 2 cups mashed banana (440 grams; about 4 large bananas)– 2 cups all-purpose flour spooned & leveled (250 grams)– 1 teaspoon baking powder– ½ teaspoon baking soda– 1 teaspoon ground cinnamon– ½ teaspoon salt

Line a 9x5-inch loaf pan with parchment paper and spray with non-stick cooking spray. Although optional, this simplifies bread removal from the pan. Warm the oven to 350ºF (180°C).

Butter and sugars can be creamed with a stand mixer or handheld mixer with a paddle attachment. Next, add eggs and vanilla. Make mashed bananas last. Please don't worry if the mixture looks curdled!
Dry ingredients: Mix flour, baking powder, soda, cinnamon, and salt in another bowl. Complete batter: Mix dry and wet ingredients. Mix cinnamon and sugar in a small bowl.

Build the bread: Pour half the banana bread batter into the loaf pan, sprinkle with cinnamon sugar, and top with the rest.

Two swirls can be made by adding one-third batter, half cinnamon sugar, another one-third, and the rest. Bake until a toothpick inserted in the centre comes out clean.
