This traditional apple pie is made with a tasty flaky pie crust and a sweet apple filling. This pie is great for fall or Thanksgiving!
INGREDIENTS
– 7 cups (840 grams) sliced apples (peeled, cored, and sliced into 1/4-inch slices)– 1 tablespoon (15 ml) fresh lemon juice– 1/2 cup (100 grams) granulated sugar– 1/4 cup (50 grams) light brown sugar packed– 1/4 cup (32 grams) all-purpose flour (spooned & leveled)– 1 teaspoon ground cinnamon– 1/4 teaspoon ground nutmeg– 2 pie crusts homemade or store-bought– 1 tablespoon (15 grams) butter cut into piece– 1 large egg– 1 tablespoon milk– Coarse sugar for sprinkling on top optional
INSTRUCTIONS
Warm the oven up to 204°F (400°C). Place the oven rack in the lower third of the oven. Toss the sliced apples and lemon juice together in a large bowl until everything is well mixed. Put away.

Mix the granulated sugar, brown sugar, flour, cinnamon, and nutmeg in a separate bowl. Pour the dry ingredients over the sliced apples and mix until coated. Set aside 15–20 minutes while making pie crusts.

Roll one pie crust to 12 inches in diameter, place it in a 9-inch pie plate, gently fit it, and trim the edges. Put in fridge. Roll out the second pie crust dough and cut lattice strips, decorations, or leave whole to top the apple pie.

Remove the pie plate from the fridge. Scoop the filling into the pie crust with a slotted spoon, leaving as much juice as possible in the bowl, and spread evenly. Butter dots. Add the second pie crust and decorate the edges.

Add the egg and milk and mix them well with a whisk. Use the brush to cover the pie and the edges. If you want, you can sprinkle coarse sugar on top.

Bake the pie for 20 minutes in the lower third of the oven at 400°F (204°C), then lower the temperature to 375°F (190°C) and bake for 35 to 40 minutes until the top is golden brown and the filling is bubbly Avoid edge browning with a pie crust shield. Aluminum foil prevents pre-baking pie browning.

Take the pie out of the oven and set it on a wire rack to cool completely. Cut it up and enjoy once it's cool!
