Brownie Cookies are chewy, fudgy chocolate brownies in cookie form! Delicious and easy to make!
INGREDIENTS
SERVINGS: 30 COOKIES– 1 cup (125 grams) all-purpose flour , spooned & leveled– 1/4 cup (22 grams) natural unsweetened cocoa powder– 1 teaspoon baking powder– 1/4 teaspoon salt– 6 tablespoons (85 grams) unsalted butter , softened– 3/4 cup (150 grams) brown sugar , packed– 1/2 cup (100 grams) granulated sugar– 2 large eggs , room temperature– 1 teaspoon pure vanilla extract– 8 ounces semi-sweet chocolate
INSTRUCTIONS
Sift flour, unsweetened cocoa powder, baking powder, and salt into a large bowl and whisk until well combined. Set aside.

Mix the butter, brown sugar, and granulated sugar in a stand mixer with the paddle attachment or a large bowl with a hand-held mixer for 1-2 minutes. Add eggs and vanilla extract, scraping bowl sides.

Mix in the melted chocolate until combined. Just combine the dry ingredients on low speed. Cover tightly and refrigerate for at least an hour.

Preheat the oven to 350°F (177°C) 15-20 minutes before baking the cookies. Parchment two large baking sheets.

Take cookie dough from the fridge. Use a 1.5 tablespoon cookie scoop to scoop cookie dough, roll into balls, and place on prepared baking sheets with space between them.

Bake cookies in batches at 350°F for 9-11 minutes until set and cracking. Remove from oven, cool on baking sheets for 10 minutes, then transfer to wire rack to finish cooling.
