For these simple drop biscuits, you don't need to roll or cut the dough. It takes less than an hour and only seven easy things to make them.

Heat oven to 425°F (218°C). Take a big baking sheet and cover it with parchment or silicone. In a large bowl, mix flour, baking powder, baking soda, granulated sugar, and salt.

Cut 6 tablespoons (85 grams) of butter into cubes and add to the dry ingredients. Reserve 2 tablespoons (30 grams). Cut the butter into pea-sized crumbs in the dry ingredients.

Do not overmix the dough or the biscuits will be tough. Buttermilk can be added 1–2 tablespoons (15–30 ml) if the dough is dry.

Scoop ¼ cup of dough onto the baking sheet, leaving space between each dough mound. Choose a nonstick measuring cup or large scoop for this step.

Coat biscuit tops with buttermilk. Bake until biscuits are golden and cooked, 15–20 minutes. Leave oven. Finally, melt 2 tablespoons (30 grams) of butter.
