This simple, dairy-free, vegan "Eggnog" will be a holiday favorite. I'll demonstrate how easy this creamy, spiced holiday drink is with cashews, water, sweetener, and spices.
INGREDIENT
To Make the "Eggnog"– 1 cup raw cashews– 4 cups filtered water– 4-6 tbsp maple syrup or keto syrup– 1 tsp vanilla– 1 tsp ground cinnamon– 1/2 tsp ground nutmeg– 1/4 tsp ground cardamom– 1/4 tsp ground cloves– 1/4 tsp ground allspiceFor Serving– whipped coconut cream– brandy, rum, cognac, or bourbon– cinnamon or nutmeg for sprinkling on top
INSTRUCTIONS
Soak raw, unsalted cashews in filtered water. Soak overnight in room-temperature water or for 20–30 minutes in boiling water to swell.
Step 1
Blend cashews with 4 cups of filtered water after draining. Blend until smooth and creamy.
Step 2
This is fun! Add 4 or 6 tablespoons maple syrup to sweeten eggnog. Measure and add spices and vanilla. Blend again to incorporate all ingredients.
Step 3
Keep refrigerated for 5-6 days. Spices settle, so shake before serving.
Step 4
Serve alone, in No Oats, with whipped coconut cream and nutmeg, or with a shot (one ounce) of brandy, rum, cognac, or bourbon. Enjoy the holidays!
