Easy Sourdough Banana Bread Recipe

This delicious, non-sweet Easy Sourdough Banana Bread uses sourdough starter. Fast, fluffy cinnamon-sugar bread may be the perfect breakfast!

Ingredient

– 3 ripe banana – 1/4 cup vegetable oil – 1/2 cup brown sugar – 2 large egg – 1 teaspoon vanilla extract – 3/4 cup sourdough starter – 1/4 cup plain coconut yogurt  – 2 cups all-purpose flour – 1 teaspoon baking soda – 1 teaspoon baking powder – 1/2 teaspoon salt – 1-2 Tbsp cinnamon-sugar

Butter a 9x5 loaf pan. Consider lining with parchment paper and baking spray. Pre-heat the oven to 350.

Mash bananas in a big bowl. Stir in oil, sugar, eggs, and vanilla. Add coconut milk yogurt and unfed sourdough starter (you're using the discard).

Stir flour, sea salt, baking soda, and baking powder in a separate bowl.

Stir wet and dry ingredients together. Sprinkle cinnamon sugar over batter in loaf pan.

Bake 55-60 minutes until a tester inserted in middle comes out clean. Cool in pan for 10 minutes, then carefully transfer to wire rack to finish cooling.
