French Toast Muffins Recipe

Quick and easy french toast muffins are made in a muffin tin. Soft, buttery french toast cups with crunchy cinnamon streusel. 

Cinnamon Crumble Topping – ¼ cup (30 g) all purpose flour – ¼ cup (50 g) light brown sugar – ½ teaspoon ground cinnamon – ¼ cup (57 g) cold butter, evenly cubed French Toast Muffin – 5 large eggs, room temperature – 1¼ cup (296 ml) milk – ¼ cup (59 ml) heavy cream or half and half – ¼ cup (50 g) granulated sugar – 2 teaspoons (10 ml) vanilla extract – 1 teaspoon ground cinnamon – ¼ teaspoon salt – 16 oz. loaf bread, cubed

Mix the flour, brown sugar, and ground cinnamon in a large bowl to form the crumble topping.

Mix the chilled diced butter with the dry ingredients until the streusel resembles wet sand with some larger chunks. Store in the fridge until topping the french toast muffins.

Whisk eggs in a large bowl until completely mixed. Add milk, heavy cream, sugar, vanilla, cinnamon, and salt and mix well.

Stir the cubed bread into the spiced custard until well coated. Stir one or two times over 20–30 minutes. Set aside until oven warms.

Preheat oven to 350 F (177 C) for 20–30 minutes. Melt butter and grease a 12-cup muffin tray before baking.
