Ginger Sugar Cookies Recipe
Gourmet magazine from 1965 has Ginger Sugar Cookies. These cookies have brown sugar, rich molasses, and warm cinnamon and ginger.
Ingredient
– 3/4 cup Earth Balance Vegan Buttery Stick
– 1 cup brown sugar
– 1 egg
– 1/4 cup molasse
– 2 1/4 cups flour
– 2 teaspoons baking soda
– 1 teaspoon ground cinnamon
– 1 teaspoon ground ginger
– 1/4 teaspoon salt
– Sugar for rolling

Mix the butter and brown sugar together slowly. Beat it some more until it gets fluffy.

Mix the egg and molasses into the butter. Beat until the mixture is smooth.

Mix flour, baking soda, spices, and salt. Beat dry ingredients into butter mixture until fully incorporated. Refrigerate dough 1 hour.

Warm the oven up to 375 degrees F.

Preheat oven to 375F. Make small dough balls and roll them in sugar. Parchment a baking sheet.

Put dough balls on baking sheet at least 3 inches apart. Baking at 375 degrees F for 10–12 minutes firms it.

Leave on baking sheet for 1 minute, then cool on racks.
