Ingredient
-1 box spice cake mix 15.25 ounces
-2 large eggs
-3 tablespoons molasses
-2 tablespoons vegetable oil
-1 ½ teaspoons ground ginger
-1 teaspoon pure vanilla extract
-⅓ cup powdered sugar

Warm the oven up to 375°F. Put parchment paper on a baking sheet and set it aside.

Mix cake mix, eggs, molasses, oil, and vanilla extract in a large bowl with a hand mixer or stand mixer with the paddle attachment until well blended. Place confectioners' sugar in a medium bowl.

Roll sticky dough balls in confectioners' sugar using a medium cookie scoop (1 ½ tablespoons) or two spoons. Roll dough between palms to make a ball.

On prepared baking tray, lay dough balls 2" apart.
Bake for 7–9 minutes in preheated oven. Set bottoms, undercooked middles. Let cookies cool on pan for 5 minutes before moving to wire rack.
