Grammie's gingerbread made my brother and me ravenous one morning! Grilling and a recipe modification made this delicious. Whenever I smell it cooking, I think of that morning!
– 1 ½ cups all-purpose flour– 1 teaspoon baking powder– ¼ teaspoon baking soda– ¼ teaspoon salt– ½ teaspoon ground dried ginger– 1 teaspoon ground cinnamon– 1 egg– ½ teaspoon vanilla extract– ¼ cup molasse– 1 ½ cups water

In a bowl, whisk together the flour, baking soda, ginger, cinnamon, baking powder, and salt; set aside. In a another mixing bowl, beat the egg, molasses, and vanilla until smooth.

Add the water and whisk until well combined. A few lumps are OK when combining the flour mixture with the molasses mixture. Stir until just incorporated.

Put a griddle over medium-high heat with a light oil coating. Spoon the batter onto the griddle in generous portions, and heat until bubbles appear and the edges become crispy.

Cook until the opposite side is browned after flipping. Proceed with the leftover batter.
