Gooey Butter Cake Recipe

It's all in the name, really! Gooey butter cake is the epitome of sugary, ooey-gooey, and perfect cake. This is an extremely decadent and delectable dish!

INGREDIENTS 

– ½ cup unsalted butter melted and slightly cooled (115 grams; 1 stick) – 1 ¼ cups granulated sugar (250 grams) – 1 large egg room temperature – 1 large egg yolk room temperature – 1 teaspoon pure vanilla extract – 2 cups all-purpose flour spooned & leveled (250 grams) – 1 tablespoon baking powder – ½ teaspoon salt

INSTRUCTIONS

Preheat the oven to 350°F (180°C). Prepare a 9x13-inch baking pan with nonstick spray or parchment. Set aside. Mix sugar and melted butter in a large bowl. Add egg, yolk, and vanilla. Mix flour, baking powder, and salt with a rubber spatula or wooden spoon until combined. Cookie dough-thick mixture.

Press the dough evenly into the baking pan with your hands or a measuring cup. Set aside.  Mix cream cheese until smooth in a stand mixer with the paddle attachment or a large bowl with a handheld mixer. Mix eggs, vanilla, and melted butter on medium speed. The lumpy mixture is fine!

Stop and scrape the bowl, then slowly mix in the powdered sugar until smooth and creamy. Don't worry about small lumps. Add the cream cheese mixture to the cake layer and spread evenly.

When it's done, the top should be lightly browned and the middle should be mostly set. As soon as it's cool, sprinkle it with powdered sugar, cut it up, and enjoy!
