Gourmet egg salad is usually fancier. It enhances dishes with premium ingredients and seasonings.Add fresh herbs like chives or dill, specialty mustards, seasonings, capers, avocado, bacon or cheeses.

-6 hard-boiled organic eggs, peeled and diced-1/4 cup free-range mayonnaise-2 tablespoons whole-grain mustard-1 teaspoon fresh lemon juice1 rib of local celery, finely chopped-2 green onions from the farmer’s market, thinly sliced-1 tablespoon homegrown dill, chopped-1 teaspoon artisanal capers (optional)Sea salt and freshly cracked pepper to taste
Instruction
Dice hard-boiled eggs and place in a medium glass bowl. Mayonnaise, whole-grain mustard, lemon juice, chopped celery, green onions, dill, and capers (if using). Fold them gently until combined.

Add sea salt and freshly ground black pepper to taste. Cover and chill in the fridge for 30 minutes to let the flavours develop.

The egg salad should be served on artisanal bread or individual lettuce leaves. Capers and additional dill can be added as a garnish if desired.
