Preheat oven to 350°F (177°C). Layer coconut evenly on a large baking sheet. Bake at 350°F (177°C) for 8-12 minutes, stirring occasionally to brown coconut evenly.

When lightly browned, remove the coconut from the oven and cool on the baking sheet.

TO TOAST THE COCONUT IN THE MICROWAVE:– Spread coconut evenly in a microwave-safe baking dish. Stir coconut after 30 seconds in high microwave. After the coconut lightly browns, microwave for 15-20 seconds, stirring well.

Use oven mitts to remove the dish from the microwave after 4-6 minutes of lightly browning the coconut. transfer to wire rack to cool completely.
