– 1 tablespoon heavy whipping cream (15 ml)– 2 to 3 teaspoons finely grated lemon zest– ⅛ teaspoon salt

Beat butter until smooth in a stand mixer bowl with a paddle attachment. (If you softened the butter to room temperature as instructed, this should be easy!)

Stop the mixer and add half the powdered sugar. Return the mixer to low and mix until combined. Another half of powdered sugar. Combine on low.
Mix salt, lemon zest, and heavy cream. Combine frosting on medium-low. Test frosting and add 1 tsp lemon zest. Refrigerate or frost your favourite cake or cupcakes.
