These Lemon Poppy Seed Muffins are very tasty, simple to make, full of lemon flavor, and come with a simple lemon glaze on top. Great for dessert or breakfast!
INGREDIENTS
– 1 and ¾ cups (220 grams) all-purpose flour spooned & leveled– 1 and ½ tablespoons poppy seed– 2 teaspoons baking powder– ½ teaspoon salt– 1 cup (200 grams) granulated sugar– 1 cup (240 grams) sour cream– ½ cup (120 ml) oil– 3 tablespoons (45 ml) fresh lemon juice– Zest of 2 medium lemon– 2 large egg– 1 and ½ teaspoons pure vanilla extract
INSTRUCTIONS
Preheat oven to 375°F (190°C). Put cupcake liners in a 12-count muffin pan. Mix flour, poppy seeds, baking powder, and salt in a large bowl. Set aside.

Mix the granulated sugar, sour cream, oil, lemon juice, lemon zest, eggs, and vanilla extract in a separate bowl. Mix dry ingredients with wet ingredients until just combined.

Divide the batter evenly between the 12 muffin liners. Bake muffins at 375°F (190°C) for 18-22 minutes or until a toothpick inserted into the center comes out clean.

Take the muffins out of the oven and carefully take them out of the pan. Next, move them to a wire rack to cool all the way down.
