Madeleines Recipe

It's so easy to make French madeleines at home, and they taste great and are full of butter. The outside of these cookies is a little crisp, but the inside is soft and cakey. 

– ½ cup unsalted butter (1 stick; 115 grams) – 2 large eggs at room temperature – 1 large egg yolk at room temperature – ½ cup granulated sugar (100 grams) – 2 tablespoons packed light brown sugar (28 grams) – 1 tablespoon pure vanilla extract (15 ml) – 1 teaspoon lemon zest – 1 cup all-purpose flour spooned & leveled (125 grams)

– ½ teaspoon baking powder – ⅛ teaspoon salt Optional: Powdered sugar for dusting

Direction

Cut butter into tablespoons. Melt butter in a pot or large bowl over medium heat or in the microwave for 20 seconds. Allow to cool while mixing batter.

To thicken and lighten, beat eggs, egg yolk, granulated sugar, and brown sugar in a stand mixer with a whisk attachment or a large bowl with a handheld mixer on medium-high speed for 5–7 minutes

Raise beaters to return ribbons of mixture to bowl. Zest, vanilla.Mix half the flour, baking powder, and salt with the wet ingredients. Carefully add half the cooled melted butter into batter.

Make butter batter. Evenly fold remaining melted butter. Cool batter covered 30 minutes. It fluffs madeleine! Place in 375°F/190°C oven. Warmed butter makeleines.

Zwei 20-cup butterpans. Grease cavities and pour lots of batter. Spreading baked batter requires no smoothing. bake makeleines for 8–10 minutes until a toothpick inserted in the center comes out clean.
