Pasta with Shrimp and Cherry Tomatoes Recipe

Shrimp and Cherry Tomato Pasta has garlic and spicy red pepper flakes. Cherry tomato sauce is easy to make. An easy, delicious 20-minute weeknight dinner!

Ingredient

– 1 pound raw shrimp – 8 ounces pasta – 1/2 cup extra-virgin olive oil – 1 small onion chopped – 4 cloves garlic – 1/2 teaspoon red pepper flake – 1/2 teaspoon oregano – 2 cups cherry tomatoe – 1/2 cup white wine – Sea salt to taste – Freshly ground black pepper – 3 Tablespoons fresh Italian parsley

Drain and set aside fresh or defrosted shrimp. Cook the pasta to al dente in a large pot of boiling, salted water (follow the package instructions, but check before the time is up to avoid overcooking).

Stir in 2 tablespoons of olive oil in a medium-high sauce pan while the pasta cooks. Add onions and cook until translucent.

Spice oil with garlic, red pepper flakes, and oregano. Stir constantly for 1 minute, then add tomatoes. Not browned, garlic should be light golden. While tomatoes soften, smash them with a spoon.

Add the remaining olive oil. Put in the white wine (or broth). Stir and simmer. Season with salt and freshly ground black pepper. Add 1-2 tablespoons chopped Italian parsley. Cook 2-3 minutes.

Stir the shrimp into the pan. Leave them cooking for 2 minutes per side (depending on shrimp size). Flip the shrimp and cook for another 2-3 minutes (you want pink, firm shrimp, not tough ones).

Add pasta to the pan with shrimp and tomatoes after draining. Mix everything. Add more chopped parsley, red pepper flakes, and olive oil. Serve now.
