Peach Crumble Bars Recipe 

My homemade peach crumb bars are usually popular. Wait for summer for fresh peaches, or use frozen for that delicious flavor year-round.

Crumble: – 1 ½ cups all-purpose flour – ½ cup white sugar – ½ teaspoon baking powder – 1 pinch salt – 10 tablespoons cold unsalted butter, cut into cube – 1 large egg yolk – 1 tablespoon cold water Peach Filling: – 2 cups sliced fresh peaches, or more to taste – ½ cup white sugar – 2 tablespoons all-purpose flour – 1 tablespoon lemon juice – 1 teaspoon vanilla extract – ¼ teaspoon ground cinnamon – ¼ teaspoon ground nutmeg

Set the oven's temperature to 375°F, or 190°C. Apply cooking spray to an 8-inch square baking pan.

Crumble: Mix flour, sugar, baking powder, and salt. To make coarse crumbs, chop cold butter with two forks or a pastry cutter.

Slowly adding egg yolk and cold water should make dough crumbly. Press 1/2 of the crumble mixture into the pan for the crust. Store some for filling topping.

Create filling: Stir peach pieces, sugar, flour, lemon juice, vanilla, cinnamon, and nutmeg in a bowl. On crust, spread filling evenly, then sprinkle remaining crumble mixture.

Bake 30–38 minutes in preheated oven until golden brown and firm. Let cool to room temperature, then cut into 12 bars and serve.
