Preheat oven to 350°F. Non-stick spray a 9x13-inch baking pan and set aside. In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Set aside.

Mix the oil, eggs, brown sugar, granulated sugar, crushed pineapple, and vanilla extract in a large bowl. Mix grated carrots and chopped walnuts with wet ingredients.

Together with a rubber spatula or whisk, mix the dry ingredients into the wet ingredients until they are just mixed. Be careful not to mix the batter too much.

Put cake batter in pan evenly. Bake the cake at 350°F for 35–45 minutes until the top is set and a toothpick inserted into the center comes out clean. Keep cake top foil-covered for last 15-20 minutes to avoid browning.

Remove from oven and cool on a wire rack in pan. A stand mixer with the paddle attachment or a large bowl with a hand-held mixer can smooth cream cheese.

Smooth butter in 30 seconds to 1 minute. Scrape bowl sides as needed to mix powdered sugar and vanilla extract.

Spread the cream cheese frosting on top of the cooled carrot cake with a knife or an offset spatula. Cut it up, serve it, and enjoy!
