Pumpkin Pasta Sauce Recipe

This Easy Creamy Pumpkin Pasta Sauce Recipe is Fall-perfect! Pumpkin puree, cinnamon, nutmeg, and fresh sage make this dish cozy and comforting! Best of all, it takes under 30 minutes!

Ingredient

– 1 pound penne pasta – 1 Tablespoon extra-virgin olive oil – 2 Tablespoons margarine  – 1 small onion – 1 teaspoon sea salt – ½ teaspoon crushed black pepper – 1 cup pumpkin puree – ¼ teaspoon ground cinnamon – ¼ teaspoon ground nutmeg – ¼ cup white wine – 1 cup unsweetened almond milk – 2 Tablespoon fresh sage

Salt a large pot of boiling water. Cook the pasta until it's not quite al dente (about 1 minute less because you'll heat it in the pan with the sauce and cook it more).

Make pumpkin sauce while pasta cooks. Heat 2 tablespoons olive oil in a large skillet on medium. Sprinkle salt and pepper on onions. Stir onions occasionally for 5–8 minutes until translucent and softened.

Add wine (or water), cinnamon, and nutmeg and simmer for 3-5 minutes to reduce. Mix in pumpkin puree and milk. Mix well. Taste and add salt and pepper as needed.

After cooking, reserve 1/2 cup of pasta water, drain well, and add to pumpkin sauce pan. Stir well on medium heat to combine. It can be too thick, so add some of the reserved pasta water and stir.

Spoon onto plates. Add more crushed black pepper if desired. Top with chopped fresh sage. Enjoy!
