Ritz cookies recipe

No-bake Ritz cookies are sweet, salty, and chocolate-peanut butter-flavored with only four ingredients. Perfect for cookie exchanges or gifts to loved ones!

– 1 cup creamy peanut butter (similar to Jif or Skippy; 250 grams) – ½ cup powdered sugar (60 grams) – 60 Ritz cracker – 16 ounces semi-sweet or white chocolate roughly chopped (I like Bakers or Ghirardelli chocolate bars) Optional: Sprinkles for topping

Ingredient

Direction

Stir powdered sugar into peanut butter in a medium bowl until smooth. Use parchment on a big baking sheet. On the baking sheet, place 30 ritz crackers.

1

Scoop 2 teaspoons of peanut butter into each Ritz cracker center. Add another cracker and carefully press it down until the peanut butter touches the sides.

2

During chocolate manufacturing, freeze the baking sheet for 15–20 minutes. In a heat-safe bowl, microwave chopped chocolate for 30 seconds, stirring well after each increment, until smooth.

3

Parchment another baking sheet. To avoid defrosting, take half the cookies out of the freezer before dipping. Fork one into the melted chocolate to cover it.

4

Fork the chocolate and tap the bowl to remove excess. A toothpick removes it from the fork onto the baking sheet. Reuse cookies. Sprinkle immediately after dipping.
