Roasted Cauliflower "Mac" And Cheese Recipe

This cauliflower "mac" and cheese recipe is a great way to enjoy your pasta-based favorite without the carbs, calories, and gluten. Cauliflower is easy to cook and full of vitamins C and K to strengthen your body.

– 8 cups cauliflower floret – ¼ cup olive oil, divided – ½ medium white onion, diced – 2 cloves garlic, minced – ¼ cup salted butter – ¼ cup all-purpose flour – 2 cups half-and-half – 1 teaspoon salt – ¼ teaspoon ground black pepper – 2 teaspoons hot sauce – ½ cup shredded mozzarella cheese – 1 ¼ cup shredded sharp cheddar cheese, divided – 1 ¼ cup shredded white cheddar cheese, divided

Heat oven to 400 F. Spread 2 tablespoons olive oil on a parchment-lined baking sheet and coat cauliflower florets evenly.

To tenderize and char cauliflower, roast for 20 minutes. Use remaining olive oil in a skillet over medium heat.

Sauté onion for 5 minutes until softened and fragrant. Add minced garlic and saute 30 seconds more until fragrant.

Transfer onion mixture to a small bowl after cooking. Set aside. Butter melts in the same skillet over medium heat.

Once melted, add the flour, let it absorb most of the butter, and whisk into a wet sand-like mixture.

Add hot sauce, salt, pepper, and half-and-half. Cook until slightly thickened, stirring occasionally, for 5 minutes.

Return onion mixture to saucepan. Add mozzarella and ⅔ cup each of sharp and white cheddar.

Mix well to make a thick sauce. Add roasted cauliflower to saucepan and stir to coat with cheese sauce.

Make cauliflower mac and cheese bubbly and lightly browned in 25 minutes. Warm serve.
