Preheat oven to 350°F. Put two large baking sheets with parchment or silicone mats aside. Mix flour, baking soda, and salt in a large bowl. Set aside.

Mix butter, brown sugar, and granulated sugar in a stand mixer with the paddle attachment or large electric mixer bowl for 1-2 minutes. Scrape bowl to mix peanut butter, egg, and vanilla.

Mix the dry ingredients slowly until just combined, then add the oats. Add chocolate chips to cookie dough and gently mix until well combined.

Using a 1.5 tablespoon cookie scoop, space cookie dough balls on baking sheets. Roll the cookie dough into balls and lightly flatten them with your hand.
