This simple recipe and video will show you how to make soft, light, and delicious scones. It's great for dessert, breakfast, or brunch!
INGREDIENTS
FOR THE SCONES:– 2 cups (250 grams) all-purpose flour spooned & leveled– 1/3 cup (65 grams) granulated sugar– 1 tablespoon baking powder– 1/2 teaspoon salt– 6 tablespoons (85 grams) cold unsalted butter cubed into piece– 1/2 cup (120 ml) heavy whipping cream plus more for brushing the top– 1 large egg– 1 teaspoon pure vanilla extractFOR THE VANILLA GLAZE:– 1 cup (120 grams) powdered sugar– 1-2 tablespoons (15-30 ml) milk– 1/2 teaspoon pure vanilla extract
INSTRUCTIONS
Warm the oven up to 204°F (400°C). Put a silicone baking mat or parchment paper on a large baking sheet and set it aside.
1
Stir flour, granulated sugar, baking powder, and salt in a large bowl. Cut cold cubed butter into dry ingredients with a pastry cutter or fork until pea-sized crumbs form.
2
In a separate bowl, mix heavy whipping cream, egg, and vanilla extract. Just combine wet and dry ingredients. Fine if the mixture is crumbly!
3
Shape the mixture into a ball on a lightly floured surface. Flatten into a 7-inch circle. Cut the dough into 8 equal pieces and place them on the baking sheet with space between them.
4
Put the baking sheet in the freezer for 5-10 minutes to chill the scones. Apply heavy whipping cream to scone tops. Without a glaze, you can sprinkle coarse sugar on top.
5
Scone tops should be lightly browned and cooked through after 18-22 minutes at 400°F (204°C). Cool completely after removing from the oven.
6
In a medium bowl, combine powdered sugar, milk, and vanilla. Milk thins the glaze; powdered sugar thickens it. Glaze the scones and let them harden for 10-15 minutes. Serve and relish.
