Traditional Italian casserole Tasteful Tomato Gratin-Pomodori Gratinati feeds kids healthy ingredients! This hearty vegetarian side or main can feed many. Summer casserole must-have!

– 8 medium tomatoe– tomato pulp– 1 clove garlic– 1 cup bread crumb– ½ cup bread– 2 Tbsp fresh parsley– 2 Tbsp fresh basil– ¼ cup extra-virgin olive oil– Salt

TOMATO PREP
Cut tomatoes in half. Don't puncture the tomatoes as you scoop out the pulp. Reserve pulp in a small bowl.

Add a pinch of salt to scooped tomatoes. While preparing the stuffing, place the tomatoes upside down (salted side down) on a rack of paper towels or a baking pan to drain.

Stuffing preparation
Add 1/2 cup of tomato pulp (not seeds) to a food processor or blender. Stir in garlic, parsley, basil, and 4 tablespoons olive oil. Pulsate until smooth.

Add the bread crumbs and bread (I used the inside of a great sourdough loaf). Season with salt (I added 2 tsp).

Parchment your baking dish. Drizzle olive oil on parchment paper. Stick tomatoes in the dish and stuff them. Add olive oil to each tomato's gratin stuffing.

Bake grated tomato Preheat oven to 350° Cover the baking dish with foil and bake. Bake tomato gratin 30 minutes. Remove foil and bake for 10 more minutes. Serve warm or room temperature.
