Torta Caprese is a Capri-born flourless chocolate cake. Classic and somewhat sweet, don't miss this dessert!
– ¾ cup dark chocolate (about 70% cacao) 150 gram– ½ cup unsalted butter, cubed– ½ cup granulated sugar– 3 large eggs, separated– 1 ¾ cups almond flour 185 gram

Warm the oven up to 325 degrees. Set away a springform pan that has been greased and lined.

Use two heat sources to melt chocolate. Add butter to melted chocolate and stir until combined. Let cool.

With an electric mixer, beat the sugar and egg whites in a large bowl for about two minutes, until the mixture is light and foamy.

With an electric mixer, beat the egg whites in a different bowl for about 4 minutes, or until stiff peaks form.

Chocolate, almond flour, butter, and sugar in bowl. Blend after chilling. Use a rubber spoon to softly add egg whites. Put mixture in springform pan.

Bake the cake on the center rack for 30–35 minutes to release from the pan. Bake less.

After the cake cools on a wire rack, remove the collar. Top with powdered sugar before serving.
