In a large saucepan or skillet, heat olive oil on medium.
Add chopped onion, garlic, leek, and dried thyme.

Sauté vegetables for 5-7 minutes until softened and translucent. Insert the diced tomato can with juices into the saucepan.

Mix in sugar, Dijon mustard, vinegar, curry powder, salt, and black pepper. Mix everything well. To coat the drained and rinsed beans, gently fold them into the sauce.

Reduce the heat to low and simmer the beans for 20–30 minutes, stirring occasionally to avoid sticking. As beans simmer, flavors blend.

Add water or broth if the mixture gets too thick.
Taste and add salt, pepper, or other seasonings as needed.

Cool the beans before serving.
