In a big pot or skillet, heat olive oil on medium. Add chopped onion, garlic, leek, and dried thyme.

Sauté vegetables for 5-7 minutes until cooked and transparent. Insert the diced tomato can with liquids into the saucepan.

Mix in sugar, Dijon mustard, vinegar, curry powder, salt, and black pepper. Mix everything well. To coat the drained and washed beans, gently fold them into the sauce.
