Turtle Cookies Recipe

Turtle cookies are chewy chocolate cookies with chopped pecans, molten caramel, and chocolate chips. A drizzle of melted chocolate and caramel top these pecan turtle cookies.

– 1 cup (93 g) chopped pecan – 1 cup (170 g) soft caramel candies, chopped about 20 piece – 1 cup (170 g) chocolate chip – 1 cup (226 g) unsalted butter – 2 cups (240 g) all purpose flour – 2 teaspoons cornstarch – ¾ teaspoon baking soda – ½ teaspoon salt – ¾ cup (150 g) light brown sugar – ¾ cup (150 g) granulated sugar – 1 teaspoon (5 ml) vanilla extract – 1 large egg, room temperature – 1 large egg yolk, room temperature – ½ cup (40 g) cocoa powder

Mix chopped pecans, chocolate chips, and caramel candy in a small bowl. Reserve 1 cup for cookie topping. I reserve 22 caramel candies, pecans, and chocolate chips.

In a separate bowl, combine the flour, baking soda, cornstarch, and salt by whisking them together until they are thoroughly blended.

Mix the cooled melted butter, light brown, and granulated sugars in a large bowl. Egg, egg yolk, vanilla essence, and cocoa powder should be mixed well.

Mix the dry and wet ingredients just until mixed. Mix in remaining pecans, caramels, and chocolate chips. Cover and refrigerate cookie dough for 30–60 minutes before baking.

Preheat oven to 375 F (190 C) for 30 minutes before baking cookies. Large baking sheet parchment. Rest dough for 30 minutes while oven heats.

Use a medium cookie scoop (2 teaspoons, 30 ml) to form chocolate turtle cookie dough balls, roll them in the reserved cup of nuts, chocolate, and caramel bits.

Bake for 9 to 11 minutes, or until the cookies' centers are slightly puffed and the edges are firm, at 375 F (190 C).
