Vegan Falafel Burger Recipe

Falafel, a Middle Eastern staple, is enjoyed worldwide. Falafel is usually round or slightly flattened and has a crispy exterior and a moist, flavorful interior. 

– 1 cup dried chickpea – ½ onion, diced – 3 garlic cloves, diced – ½ cup chopped flat leaf parsley – ¼ cup rolled oat – 1 teaspoon baking powder – 1 teaspoon coriander – 1 ¼ teaspoon cumin, divided – 1 ½ teaspoon coarse salt, divided – ¼ teaspoon pepper – ¼ cup tahini – 1 lemon, juiced – 1 teaspoon garlic granule – 2 tablespoons oil – 1 tomato – 4 bun – 4 butter lettuce leave

Cover dry chickpeas with 3 inches of water in a bowl. Soak overnight. Drain chickpeas.

In a food processor, combine the drained chickpeas, onion, garlic, parsley, oats, baking powder, coriander, 1 teaspoon cumin, 1 teaspoon salt, and pepper.

Pulse several times to chunkify the mixture. Make 5 patties, place on a baking sheet, and refrigerate for 30 minutes.

Oil a large frying pan and heat on medium-high. Add the burgers and cook for 3 minutes on each side, flipping carefully to keep them together.

Cut the tomato. Serve burgers on buns with tomato slices, lettuce, and tahini sauce.
