Veggie Coconut Curry Ramen Recipe

Looking for a vegetarian curry with healthy ingredients, loads of aromatics, and even ramen? You've found it. Kristen Carli, MS, RD, created this vegetable coconut curry ramen dish.

Ingredient

– 1 tablespoon olive oil – 2 teaspoons crushed ginger – 1 tablespoon minced garlic – 8 ounces shiitake mushrooms, sliced – 1 cup chopped bok choy – 1 tablespoon curry powder – 1 teaspoon salt – ½ teaspoon pepper – 1 teaspoon red curry paste – 4 cups veggie broth – 1 (15-ounce) can unsweetened coconut milk – 2 packages ramen noodles (seasoning packets discarded)

Direction

Put oil in a Dutch oven over medium heat. Once oil is heated, add ginger and garlic. For 1 minute, sauté until aromatic.

Curry powder, salt, and pepper should all be added now. In a pan, cook for five minutes.

Mix in red curry paste, vegetable broth, and coconut milk. Cook for 20 minutes at a simmer.

Put in the ramen noodles. It will take about 8 minutes of simmering until the noodles are soft and cooked.

On top of the dish, sprinkle some chopped scallions.
