Waffle Cookies Recipe

Traditional waffles are buttery vanilla sugar cookies fried in an iron. These simple cookie waffles are buttery inside and golden brown outside. 

– ½ cup (113 g) unsalted butter – 1½ cups (180 g) all purpose flour – 1 teaspoon cornstarch – ½ teaspoon baking powder – ½ teaspoon salt – ¾ cup (150 g) granulated sugar – 1 large egg, room temperature – 1 teaspoon (5 ml) vanilla extract – ¼ cup (30 g) powdered sugar for dusting optional

Melt the butter in a small bowl and let it cool for about fifteen minutes in the refrigerator.

In a separate bowl, combine the flour, cornstarch, baking powder, and salt by whisking them together until they are thoroughly incorporated.

Mix cooled melted butter and granulated sugar in a large bowl. Egg and vanilla extract should be mixed well.

Set the waffle iron's heat setting to your preferred level. A heat setting of two is what I advise. Grease the waffle iron with a small amount of nonstick spray.

Use a tiny cookie scoop (1 teaspoons, 15 ml) to place vanilla sugar cookie dough balls on the waffle iron. A tablespoon of cookie dough in each of the four waffle maker sections.

Use a silicone knife or flexible spatula to remove the cookies off the heated waffle iron. Cool the cookies on a rack until room temperature.

Repeat with the remaining butter cookie dough until all is cooked into the tastiest waffle cookies. Sprinkle powdered sugar or add your favorite topping and enjoy!
